That's an odd problem. iTunes downloads a 'package' with the latest software for your iPod model, the first time you do a Restore (or Update) on the iPod. My only theory is that the downloaded package you have is corrupted somehow, so iTunes cannot use it to Update or Restore your iPod. But it's odd that the problem followed you to a new Mac, unless doing an automated migration transferred the same corrupted iPod software package from old Mac to new Mac.
You could try the following.. In Finder, from the menu bar, select Go -> Go to Folder. Type ~/Library where it says Go to the folder, and click Go. This takes you do the normally hidden Library folder in your user account. From there, double-click iTunes folder, and then iPod Software Updates folder. You should find the previously downloaded software package(s) for your iPod. Create a new folder on your Mac's desktop, and copy all files you find there to that folder, as a backup in case you need to put them back. Then delete the files in the iPod Software Updates folder. You'll probably need to enter your Admin user name/password to authorize the change.

Try doing a Restore again. I would do a Restore instead of an Update, unless you do not want to erase the iPod. The Restore erases the iPod, reinstalls its software, and sets it to default settings. Since iTunes no longer has a previously downloaded iPod software package, it should download it again from Apple before doing the Restore. Hopefully, it will work this time.
